  • Chicken
  • 2 – 2 1/2 pounds chicken bone-in, skinless

  • 1/2 cup whole wheat flour

  • 1/2 teaspoon black pepper ground

  • 2 egg whites slightly beaten

  • 2 tablespoons olive oil

  • Rice
  • 1 yellow onion small, diced

  • 1 garlic clove minced

  • 1/2 cup red bell pepper diced

  • 1 cup long grain brown rice uncooked

  • 1 3/4 cups chicken broth low-sodium

  • 14.5 ounces canned tomatoes diced

  • 1 tablespoon tomato paste no-sugar added

  • 1 teaspoon kosher salt

  • 1/2 teaspoon black pepper freshly ground

  • 1 teaspoon oregano dried

  • 1/4 teaspoon cayenne pepper

Directions

  • Add egg whites to a medium mixing bowl. Combine in a separate mixing bowl or gallon size zip lock bag, flour, ½ teaspoon black pepper and cayenne pepper. One at a time, dip chicken into egg whites and allow excess to drip off.
  • Next, coat both sides of chicken pieces in flour mixture. Heat oil on medium heat until a small amount of flour dropped in sizzles…indicating oil is hot enough. Add chicken and lightly brown on both sides. Remove from oil and drain on a paper towel.
  • Preheat oven to 375 degrees.
  • In the same skillet, sauté onion, garlic and bell pepper until tender, about 5 minutes. Add all ingredients, except chicken, to a 9” x 13” casserole dish, stir to combine. Place chicken in the rice mixture, loosely cover with foil and bake approximately 60 minutes or until rice is tender and has absorbed most of the liquid.

  • 1 pound boneless skinless chicken breast

  • 15 ounces canned black beans drained, and rinsed

  • 2 cups chunky salsa no-sugar added

  • 8 whole wheat tortillas

Directions

  • Add all ingredients to the slow cooker, except tortillas. Cook on low for 4-6 hours. Shred it with a fork and spoon into tortilla. Serve with your favorite toppings or on it’s own!

Notes

Tip: This chicken is great in a taco salad!

3-Slow Cooker Thai Peanut Chicken

Ingredients

  • 4 boneless skinless chicken breast about 8 ounces each

  • 3/4 cup light coconut milk canned

  • 4 sticks lemongrass dried

  • 1 tablespoon peanut butter

  • 1 lime zest and juice

  • 2 tablespoons peanuts chopped

Directions

  • Pour the light coconut milk into the slow cooker. Using a whisk, blend in the peanut butter until it is well dissolved in the milk.
  • Place the chicken breasts in the milk, toss in the lemongrass and add the lime juice and zest over the top. (reserve the peanuts for after cooking)
  • Cook on low for 4 hours or until the chicken reaches an internal temperature of at least 165 degrees.
  • When finished cooking, shred the chicken with two forks and stir in the peanuts.
  • Eat as it is or serve over a bed of bean threads as we did here (cooked to package directions)

Notes

Nutrition Facts do not include bean threads.Thai food typically has some kick to it. We did not add any hot spices for personal reasons. But you can certainly stir in some cayenne or other pepper to give it that kick that most people expect.

4-Taco Salad

  • 1 chicken breast bone-in, with skin, remove skin after cooking

  • 1 onion diced

  • 1 tablespoon taco seasoning

Directions

  • Preheat oven to 375 degrees.
  • In a roasting pan add chicken, cover and roast approximately 35 minutes or until the juices run clear. Allow to cool slightly, remove skin and cut into 1″ chunks. In a medium skillet, combine chicken, taco seasoning and 1/2 cup water. Cook over medium-low heat just until water is absorbed, approximately 5 minutes.
  • In a separate pot, warm the beans with a little water to make them more fluid, not runny, just pourable.
  • Place the seasoned chicken in the bottom of a 9″ x13″ casserole dish. Pour the beans over chicken. On top of beans, layer with the toppings of choice and serve.

  • 3/4 cup low fat milk

  • Stew Instructions
  • Add all stew ingredients to the slow cooker, stir to combine. Cook on low for 5 hours. Combine the thickener with an equal amount of broth from the slow cooker. Stir to remove any lumps, add to the slow cooker and stir to combine.
  • After 5 hours, turn slow cooker to high and be sure the broth is boiling slightly then add dumplings to the slow cooker. Using a tablespoon, drop dumplings on top of stew mixture. Be careful to place the dumplings on top and not into the stew. After adding dumplings, cook for 1 hour on high, or until dumplings are cooked through and no longer raw in the center.
  • Dumpling Instructions
  • In a large mixing bowl, combine the flour, baking powder and salt, whisk to combine. Pour in the oil and cut into the flour mixture with a fork. And milk and stir with a large spoon just until flour is moist.
  • Remove bay leaves before serving.

Directions

  • Cook the first four ingredients in your slow cooker on low for 4 hours.
  • When the pumpkin is soft and cooked through, use a hand blender, immersion blender, or food processor to blend in the remaining ingredients.
  • Sprinkle a little cayenne pepper on top when serving, if desired.

Notes

If canned pumpkin is used, use 2 (15-ounce) cans.Skim milk is NOT recommended (use more or less milk depending on thickness preferred), the amount of milk will depend on desired consistency of soup. If you like soup a little on the thinner side, add 3 cups of milk.

  • 1/2 cup black beans dry, rinsed

  • 1 tablespoon olive oil
